Squash season has arrived!!

Autumn is my favorite time for cooking! More than anything, I love winter squash. Growing up, acorn squash put under the broiler with maple syrup was a family favorite. I get a special feeling just thinking about fall squash dishes!

I’m heading off to an event for the day, so I tackled this Harvest Squash Medley first thing this morning. I got the recipe off of what is becoming my favorite recipe website: Taste of Home. It’s easy to search and the recipes all look amazing!

Butternut squash, apples, honey, orange juice, spices…mmmm. Now, I admit, this isn’t a soup at all. I know. But it sounded so good — and is so good! — that I wanted to share it with you anyway.

I ended up changing up the recipe quite a bit. I omitted the sweet potatoes since I had a really big squash. I sauteed two onions in butter with fresh sprigs of thyme to give it a savory side. I used grated lemon rind instead of orange, but I did keep the orange juice and also added a squeeze of lemon. And I used three apples instead of two (skin on) that I picked up at the farmers market this morning.

Delicious! The flavors of fall. Rich, sweet, and satisfying. Happy Autumn!!
