Belated Moroccan Vegetarian Stew
My dear devoted readers, I’d like to apologize for making a soup the other day and failing to let you know. But don’t worry, there are still plenty of leftovers in my fridge, so I’m technically still allowed to write about it, per the rules I’ve made up.
I’ve already mentioned my favorite new recipe website, Taste of Home. I’ve now made my first soup from the site and I’m definitely a fan. This soup was Moroccan Vegetarian Stew. I was drawn to it because I love winter squash soups, but I detest pulling out my blender, and most squash recipes do call for this bulky device. Not so with this stew! Chunks of butternut squash, zucchini, tomato, carrot, onion and potato, with an impressive array of spices. Quite easy, aside from chopping so many vegetables. And topped with a little sour cream and fresh cilantro — delish!
On an unrelated note, who else loves frozen grapes? What a fabulous substitute for more decadent frozen desserts!
